Malts & Malt ExtractsMalt extracts are created from the germination of barley grain (malting), during this process sugars are extracted from the grain into a liquid which is the malt extract. Malt come in a dry (DME) or liquid form (DLE). Liquid malt extract is a thick syrup and actually contains one less processing step so it's more appealing to those who prefer the malt extract in its purest form. Dry malt extract is essentially dried malt extract through a process that removes the moisture content. Dry malt extract for most is easier to use due to the fact that it's in a dried texture, making it easier to measure, clean, and dry malt extract has a much longer shelf life.
